5) Nicholson Baker, A Box of Matches, 2003
A guy gets up at 4am every morning, with a match he starts his log fire in his living room and lets his thoughts wander everywhere, so you get thirty-three endlessly digressive trains of thought until the box of matches (and the book) runs out. You never know where he'll go and it's an interesting and engaging experiment in writing.
